I often cook injeera, and I use a trick told to me by mennonites women who have travelled to Ethiopia: if you can't find tef, mix self-rising flour with whole wheat flour, and instead of water...use Club soda !!!! It works REALLY well!!! It feels like the real thing ! alice, quebec

The Ethiopian coffee ceremony practiced by the woman of the family is an historic tradition with much religious symbolism. 3 cups are poured for each guest, incense wafts around the room, flax covers the floor, and usually peanuts or cooked barley are offered by way of accompaniment. From birth in Ethiopia one becomes aware of the omnipresence of coffee. It truly seems to run through the veins of our country!

Ethiopian Cuisine is rare but yet admired and sought out, considering it's unique flavors. Much production goes into making these dishes but the outcome is always well worth it. As more Ethiopian citizens settle in the U.S, many shared the traditional eating styles of Ethiopian culture. Some the dishes are relatively easy to make, just follow the links on the bottom of the page.
